Both our 750 "Charts" button is greyed out on the panel.
I'm updating the SD cards right now and notice I'm dl-ing "FliteCharts".

Is this the same thing or not?
Should we be seeing geo-ref'd approach plates on the 750s?

Assuming you have a Bundle, OnePak, or Pilotpak subscription then Flitecharts is included which will give you plates on your 750, but I’m not sure if older 750s are geo-referenced— they are on the Xi for sure.

Yes. If you have a chart subscription, you will be able to see charts in two places. One is Home - Charts. The other is approach plate overlays on the Map. The approach charts are georeferenced, the SIDs and STARs are not.

If you’ve always been loading FliteCharts and the button was grayed out, you might take a look at the Charts settings in configuration mode as the chart feature could be turned off. IIRC, it has 3 settings— none, FliteCharts, and ChartView.
