I'm FAA-certificated. I'm hoping to do some flying in an aircraft registered with a civil aviation authority other than the FAA (instructor onboard). Would the landings count towards my currency (same category and class), or would the needle on my currency criteria only move if the landings are made in an N-aircraft?

61.57 Recent flight experience: Pilot in command.

(a) General experience.

(1) Except as provided in paragraph (e) of this section, no person may act as a pilot in command of an aircraft carrying persons or of an aircraft certificated for more than one pilot flight crewmember unless that person has made at least three takeoffs and three landings within the preceding 90 days, and—

(i) The person acted as the sole manipulator of the flight controls; and

(ii) The required takeoffs and landings were performed in an aircraft of the same category, class, and type (if a class or type rating is required), and, if the aircraft to be flown is an airplane with a tailwheel, the takeoffs and landings must have been made to a full stop in an airplane with a tailwheel.

Doesn't say anything about needing to be US registered or on US soil. Or even acting as PIC, which you might not be able to be in a foreign country.
Log them.

Additionally:

61.51
(j) Aircraft requirements for logging flight time. For a person to log flight time, the time must be acquired in an aircraft that is identified as an aircraft under § 61.5(b), and is—
(1) An aircraft of U.S. registry with either a standard or special airworthiness certificate;
(2) An aircraft of foreign registry with an airworthiness certificate that is approved by the aviation authority of a foreign country that is a Member State to the Convention on International Civil Aviation Organization;
(3) A military aircraft under the direct operational control of the U.S. Armed Forces; or
(4) An aircraft used to conduct a public aircraft operation under 49 U.S.C. 40102(a)(41) and 40125.

Remember, logging != acting.

You're confusing PIC which is not the term here. Being PIC is neither a necessary nor sufficient condition to log PIC.

Here you log that you have done the takeoffs and landings. It matters not if you were PIC nor not, just that you did one in an aircraft of the same category and class as the one you want currency in. You don't even need to be required crew.

Doesn’t logging sometimes = acting?
Sure.

The only real differentiation is that the requirements are independent of each other. Sometimes those requirements intersect, sometimes they don’t.

In the landing currency situation, one of them isn’t even part of the equation.

So, to the OP’s original point, it doesn’t matter that the airplane is foreign registered, the logging of that time is the same.
