Classic cars- original or build

Having an active “apiary” with receipts to show even a dollar of profit a year can often reduce property tax significantly (reclassified as agricultural instead of residential, and the tax basis is very different).
Don't need to show profit. Just need 5 or more acres and have 1 hive for every .75 acres. Boom ag exemption. Land value taxed at 1/6 instead of 1/3. Saves me roughly 3 AMU's a year.

Much as I like the idea of a classic farm truck, there are other interesting options....

Fix it up enough to let your grandmother drive it then restomod it. I have a ‘65 mustang coupe that someday I’ll restomod. Not a fan of 1965 drivetrain and suspension. If I could figure out how to put a 2.7 eco boost in it, I would

I think it might depend on how much you plan to drive it. I'm probably not going to drive a 1953 truck nearly as much as I'd drive a 65 mustang. The retro farm truck idea is growing on me.

Current plan... I've got a slab of granite in the garage for the apartment above that needs to get cut down. That's hopefully getting dropped off this weekend to free up a garage bay. Talked to my uncle and we're going to try and sneak the truck out without grandma knowing. Getting dark earlier is gonna help.
