Any reason to install an engine, before the wings and empennage are attached?

Not sure what this was all about? A plane being rebuilt? Or some sort of safety rig to teach students how to safely hand prop?

Most homebuilders hang the engine before the wings and sometimes the horizontal stab & elevator, to install the avionics/engine instruments and wire up the aircraft before trailering and final assembly at an airport.

Also might make sense for balance issues

I'm not sure that is an actual attach point for the wing or tail. I'm guessing this is somebody's play thing. Some thing that is never going to be airworthy but fun to toy around with.

The inboard section of at least one wing with a fuel tank is attached. Just a guess but an A&P school test stand where the same engine is overhauled. Kind of looked like a wood prop. May have been a smaller engine than an O-200 too?

A&P school test stand would be my guess as well.

When I was instructing I assisted the mechanic recover the Piper Pawnee. The engine came back so we installed it, then took the plane out to start the engine. The plane was still missing the wings, rudder, elevator and all its skin.

It looked like Wonder Womans plane as we taxied it around....

I thought it was an A&P's golf cart at first. There are a few out there.
But after watching the video, I agree, a school trainer.
