If I fly right seat in a C525 and the left seat PIC has a single pilot type and is an MEI and he signs my book for dual instruction time but next to his signature signs it as CFII instead of MEI, does that null the entry? I guess my question is, if it’s a multi engine dual received entry but the instructor doesn’t sign as MEI, does it still count?

Should not be a problem, the plane has 2 engines, and is specified in your log book as the place where the training took place.

If you want to be double safe, go to the FAA website, and print out his ratings. If any issue comes up, you have proof that he is an MEI.

MEI is a colloquialism. It's not part of the certificate number.

61.51(h)(2)(ii) Include a description of the training given, the length of the training lesson, and the authorized instructor's signature, certificate number, and certificate expiration date or recent experience end date, consistent with the requirements of § 61.197.

Actually if he wrote MEI at the end of the number that would be a future issue because that’s not his number

No issue either way. Would be more appropriate not to link an acronym other than "CFI" to the signature, but that's a mechanical process error which does not invalidate the signature. AC 61-65K includes sample endorsements with the proper signature "format," and should be used as a template.
