Okay.

This is a full @RJM62 thread. And I say that because he is a motivation. He does not rely on Carl to fulfill his earthly desires and sustenance. No, he does it on his own. He prides himself on his ability to create delicious fares without the interdiction of fast food, mom and pop, or Dennys.

No, I'm not dragging him down to that level. He is better than that. Far better than that. I respect RJM. I do not respect Denny. Wait. I respect Denny. He had a good business plan.

But his food sucks. Sorry but it does. The coffee is fine, but the steak is...

Let's not get off track here.

As many of you know, I spend a fair amount of time in Southeast Asia. I just got back from there. I ate lots of shrimp, and lots of clams. And even oysters and snail things. I do not believe I have eaten a dog. I hope I have not eaten a dog. I like dogs. And not in that sense.

Well,

I have homies. Homies that I grew up with. Homies that I never thought I'd ever meet again since I left them. I grew up in a military family. My homies rotated and this was before Facebook and the Internet.

Wait, what are we talking about here? I thought we were talking about food. We are. See, let's bring it all home. Many of my peeps are currently in Louisiana. That is the reason for the spice. Many of my peeps are in Vietnam. That explains the shrimp and the clams. That is what I eat when I am over there.

I miss the place. I miss a lot about it. I can get in to my Ford Superduty F350 double turboed and juiced with Tiger Beer to the hilt and f***ing level Saigon with the mad beast as I head towards District 1 to hit the whiskey bars.

Well I don't have a Ford Superduty 350. We do have a Ford Ranger but I don't drive it on a night out plus a car is an impediment in Ho Chi Minh City. Therefore I ride a motorbike.

But wait. All this drinking and shyte, you have to eat something, yes?

I'm glad you asked the question. So where I was going with all this was that, I got this inspiration to cook me some seafood. Not just fish, but some clams and shrimp. I love clams and shrimp. I got me some of that seasoning, some clams and shrimp, (by the way, over there, we eat the whole damn shrimp, including the head.) and I decided to have a feast.

Let's back up.

'Dinner is on your own.'

That is the text I got. Dinner was on my own. Well, ****, since dinner was on my own, I might as well eat dinner as it would have occurred in a setting where dinner and babymaking sessions seem to occur seamlessly. I'm not saying I participated in babymaking sessions at all but I'm saying that if I had and I had eaten clams and shrimp it would have been seamless. And I'm not saying it was seamless in any shape or form because if it was the babymaking sessions would have resulted in babymaking which I probably couldn't be talking about on the POA forum because although babymaking in itself is godly and righteous and sanctioned an all its the unsanctioned babymaking that is so uh.....

Where the hell did this discussion go? Who Godwined this thread? We aren't past a single post and it went off track. That had to have set a record.

**** dude. I need some c**e sla*.

Gawd I love shrimp.

...until I saw a show on Vietnamese farm raised injected plumped up shrimp.

Things I wish I never knew....

My folks catch fresh shrimp up in the Hood Canal...now them critters are tasty!

Trust me, the Vietnamese are way too cheap to pump them up with injections. But on a serious note, some of the biggest shrimp I have ever seen in my live were fresh water shrimp from the Mekong, which were almost the size of small lobsters.

Like these.

Those don't look that big in the picture but the camera doesn't tell all. Actually those are half the size as the hands in the foreground.

Thanks for the pictures. My wife is now crying all over me wanting sea food Philippine style...:lol:

Why, I'm honored. I'm glad my modest attempts at cooking inspired you. If that's truly the case, then all I can say is that the student has surpassed the teacher. Your food looks magnificent. Bravo!

As for me, I'm doing Atkins at the moment and have hit a bit of a plateau, so I decided to re-jump start the process by consuming little other than eggs and low-sodium V8 juice for a while. And although I like eggs as much as the next guy, they're not very photogenic.

That having been said, here are a few of my meals from the past few days.

I was down a pound this morning, so I guess it worked. But now I have four dozen eggs in the refrigerator that I have to work through, so omelets will remain on the menu for a while longer.

Half the size of your hand you say? That's cute...

I do not believe I have eaten a dog. I hope I have not eaten a dog. I like dogs. And not in that sense.

I like dogs too, however, consider that most dogs that are eaten for meat are raised as livestock. The Nureongi (https://en.wikipedia.org/wiki/Nureongi) is one such example. Taken with this information, how is it any different than eating pork? People raise pigs as pets and they're considered quite smart. They're one of the only animals other than humans that are known to commit suicide (frequently from being raised in small pens on factory farms). Then we have guinnea pigs which are also raised in the US as pets, but eaten in other parts of the world, notably Peru (called cui there). Sticking to rodents, Rabbit is another animal that is both eaten and raised as a pet. Another common animal with this dual use is horse. Turtles are another one. I'm sure there are plenty more, but those were the first that came to mind.

I've never eaten dog, guinea pig, or turtle. But I have eaten pork, rabbit, and horse. I wouldn't rule out the others if prepared well and in the right place.

crabs.jpg you got the ingredients right.....just not the process. Boiling that just ruined it. It shoulda been "steamed" with more Old Bay. :D

I see he is not only well into the bottom of a twelve pack but lazy to boot! Your "boil" is missing the corn, garlic and bacon! Next time, get a shopping cart(buggy), then your arms won't be too tired from carrying the beer that you cannot make it to the produce section.

Its a trap!!!!!
She doesn't want the shrimp; she wants the baby making session.
Be careful.

I know people like different things, and I'm sure it was awesome and perfectly prepared.... but nothing in those pics looks like food to me. This... this is food:

Homemade pizza dough (aged 5 days). Appearance will improve as I figure out how to form the crust, but the taste... oh, man. Never again will I buy chain pizza.

I am afraid you are right.....Well, I had an ancestor, revolutionary war vet, that had his last 2 kids when he was in his early 80s.

Even now I will be shopping with my wife and she will see one of her students. And they look at me and ask my wife, "Is that your granpa..?" o_O

Interesting. Are there levels of dignity in the animal kingdom that we should acknowledge and respect?

I think so. Can't provide a solid philosophical framework for it, but dolphins, apes, pigs... the more like me (self aware, capable of learning, tool use, etc.) the less comfortable I am with "it's just an animal".

Make sure the dough is cold and bake in a very hot oven if you want a thinner crust. The sudden increase in temperature will kill the yeast in the dough under the toppings before they have a chance to make the bread rise again.

Let the dough warm to room temperature and bake in a cooler oven if you want a thicker crust.

Either way, make sure to pre-heat the oven.

Interesting. I didn't understand the yeast killing thing. Makes sense.

Any advice for frying the pizza? I don't mean stove top, in a skillet... I mean, like Pizza Hut used to do.. High sided pan, olive(?) oil? Pizza seems to fry in the pan.

Pizza is one food that defies becoming a low carb dish. I've seen attempts at making a pizza crust using zucchini and other similar squash like vegetables, but it never looked very appealing. I've been known to go to the pizza buffet, make a salad, and top it with pepperoni and cheese scraped off the pizza crust.

I never tried frying pizza, so I really can't say for sure. But...

One of the time-honored ways to make Sicilian or other deep-crust pizzas is to first bake the crust to not-quite-done, let it cool down on its own to bake the inside, put it aside until needed, and then re-bake it with the toppings, in an olive-oiled pan, right before serving. That creates the stiff, crunchy, caramelized bottom on the crust, keeps the area under the toppings soft, and avoids under-baking the inside.

Now that deserves some research. Maybe multiple times. With different home made sauces. In the name of science.

Making and eating a pizza is one of the first things I plan to do once I hit my goal. I haven't cheated for the first 20 pounds. I have to keep it up for another 30.

Easter may be a problem, though. It would be an infamnia not to eat the Easter food. I think it's a mortal sin.

Intermittent fasting is working, long term, for me. Last meal 1900. Skip breakfast. Eat at 1100. Sixteen hours without food. If I want carbs, skip lunch too... then you have your daily budget in one sitting, and you've had a long period for blood sugar to come back down.

This is backed by no research. I'm not making any claims other than it allows me to eat stuff one shouldn't, low carb, and doesn't seem to blow the plan to hell.

I was initially thinking just intelligence, but like you're saying, it's probably our tendency to personify the animals were most familiar with. I can't really think of an objective measure that would draw a distinct line between those we eat/don't eat.

Works for me. I eat two meals, lunch and dinner. If I eat three on a regular basis, or snack, I get fat.

I'm eating more....4-5 meals and losing.

It's a very simple energy equation .....involving calories consumed vs calories burned....and what happens to calories not burned.

This is round two okay. I swear I read a post on this thread that said "steam them and add more Bay seasoning." I can't find it. Well I did that. I can't say the taste is any different, the shrimp picked up all of the seasoning and the clams none. But, regardless, it came out quite nice. I'd probably do the boil thing from hereonout. That's what they do in Vietnam and it works.

The thing though, is it only takes a couple minutes of boiling to cook shellfish. One minute can make the difference between sweet and yummy and ruining it. Steaming certainly is less idiot proof, but it does take longer.

I have shrimp in the freezer. What the hell is old bay? Sounds like nothing appropriate for shrimp.

Never had Old Bay? For me, I learned about it from north-easterners... it's a seasoning. Technically southerners use it quite a bit, too.

Common in lobster boils.
