However, for a tricycle gear airplane, aren't you supposed to keep the elevator neutral in a headwind?

I took off in a Warrior about 10 days ago with calculated 14 knot crosswind, I was on runway 14 and the wind was coming from about 070 steady 15 knots and gusting. The second the mains left the ground the nose instantly weatherviened about 30 degrees into the wind so I was traking 140 on the runway with the plane 10 feet off the ground pointing 110. CFI said good takeoff that is what is supposed to happen, now just keep it on center-line.
