Don't know where you got your brisket when in Texas- there is a LOT of mediocre to crappy brisket, especially if you are eating barbecue in a large city.
But.
When you come to Texas, I'll be glad to introduce you to some brisket that is pure heaven. It ain't in Dallas, or Houston, or even at that place in Austin where everyone waits all day to eat.
And, good brisket requires no sauce.
Pork's ok, too, though I am not as enamored thereof (ribs, yeah).
