I have to call you out on your contention about the beef, Bart.

Don't know where you got your brisket when in Texas- there is a LOT of mediocre to crappy brisket, especially if you are eating barbecue in a large city.

But.

When you come to Texas, I'll be glad to introduce you to some brisket that is pure heaven. It ain't in Dallas, or Houston, or even at that place in Austin where everyone waits all day to eat.

And, good brisket requires no sauce.

Pork's ok, too, though I am not as enamored thereof (ribs, yeah).

There was this little German smokehouse and deli I used to visit. Every Tuesday their special was a smoked sausage sandwich, man, I'd nearly kill for one of those now. Just the smell of that place had you drooling.

Although I have to say, the best bacon I've ever had is but a quick 15min Mooney hop to the northeast.

The only country ham that compares to Benton's is Clifty Farms. Still, everything Benton's does is top shelf.
