For wheel bearings, elevator tube & jackscrew, and tailwheel bearing the airplane maintenance manual for my experimental Cub specifies Mobilgrease 28.

The manufacturer of the tailwheel parts specifies SHC-100 grease, contrary to the airplane maintenance manual.

Which one should I use, and does it matter? Airplane does get flown on skis and wet environments with penetration wheels attached, but doesn’t go out much below —20F.

If you want to stick to one grease the 28 is just fine. There's been a shift toward 100 for various reasons with both having their pros/cons. However, do not mix them as 28 is clay-based and 100 is lithium based.
