What is a typical thrust produced from a cessna 172p engine at 2500 rpm?

So replacing the engine with a 500-lb-thrust turbofan would be an upgrade!
Something like this turbojet will produce 25kg of the thrust at 12 gph. Multiply by 10, assuming it scales linearly, you will be using 120 gph for 250 kg of thrust.
It doesn't scale in a linear manner; the larger the engine, the more efficient the engine. You could get near a ton of thrust on that 120 GPH.
And you'd have that airframe so far past red line so fast you wouldn't know what hit you as it came apart around you. No thanks, I'll stick with 180 hp up front.
