The sound of the switches being moved can be verified on the CVR and the time index compared with the DFR indication of the switch position.Schrödinger's switches. OK, maybe that's a bad analogy (or maybe not, or maybe it both is and is not). Without video or some other evidence, like a suicide note, I don't think we really can ever know for certain who did what.
Each engine has its own independent systems and control logic. Each switch also has independent sets of contacts, one contact that controls the fuel valves and another that sends position signals used for recording and indicating the switch status to the FDR and cockpit systems. The same, extremely unlikely, fault would have to have independently occurred in both, separate systems, on both separate engines, about one second apart, if those switches weren't physically moved, to produce both the indications on the FDR and the to cause the engines to lose power.
