I keep a record of everything we did every flight with notes on anything good or bad. I made my own 8 1/2 X 11 two-sided record sheet. This sheet also includes any endorsements given. Keeps me organized and legal.
I've never been to court as a CFI, but I'm ready.
Long cross country in a GA aircraft is limited to it's size/comfort and my bladder.
My record XC is 16.6 hour flight (Mumbai, India to NYC), but four pilots (plus autopilots), restrooms, sleep bunks (7 hr nap), a couple meals = easy money! :D
No published overlays, we just do them for a published non-prcesion approach. Not allowed to disable the GPS either (in my plane). Plus, those GPS/RNAV/RNAV RNP approaches are on the annual checkride.
At work, we don't fly NDB approaches in the traditional way anymore. If we use them, it's with a GPS overlay approach with a constant descent to a DDA. (derived decision altitude; or DA +50').

I have over 15,000 hours and the one thing I learned about headsets is that you don't have to spend money. Buy a new Sigtronics S-20 for $144. They will work just fine. I have a pair too.
