So I have a JVC Adixxion camera ( http://adixxion.jvc.com/ ) they are great little cameras sorta like the GoPro, but I prefer these just due to the form factor.

The one thing they don't do is have a mic in, but rather record ambient sound.

So I want a good little audio recorder that I can use to record audio from the radio and plane occupants.. Suggestions?

Get a Zulu headset and use their FlightLink App

There are some simple cables available that allow you to patch into the intercom and then hook up to a digital recorder of your choice. One example:

Then you just need a recorder (there are hundreds of options out there) that will accept the plug (most are 3.5mm stereo plugs, just be sure to check specs of the cable and recorder to ensure they match). One example that's pretty affordable:

Depending on what format of audio recording you need to work with, be sure to check specs on the recorder as well. The above recorder is MP3 format, some will do PCM/WAV and other formats. Intercom and radio audio is hardly high-fidelity so MP3 can work well if your application supports it.

One of those cables and just about any cell phone should work.

We carry all the adapter cables for your digital recorders, Hero2, Hero3, iPhone, iPad, etc.

You don't need anything but the cable, and your device to record.
 
Does that camera have an audio in jack at all? As Shane said, that's the simplest means. You can just use one of his splitters which plugs inline between your headset cord and the jack in the panel, and then another cord to the audio input on the camera. It will then record any audio in the headset, including ATC. And no wind or engine noise.
