I currently hold a SI for open-angle glaucoma. I'm just wondering how much defects or visual field loss before my AME would need to defer me again? How much before I would be completely denied?

I'm in the same situation. Mine appears to now be stable (most of the field loss, left eye, was caused by trauma many years back).
Does your SI require periodic HVF tests? I'd have to assume that the FAA is more worried about progression.

When you get to the point of overalpapping VF defects --->operational checkride.
If you lose in "High rez" central vision area due to glaucoma, its' a matter of "can you make acuity standards"
