Strange fuel problem on my Cherokee

I wanted to post an update. As of yesterday, I have my plane back. Thank you for all the great input! My shop talked to an engine shop that they work with a lot. Despite my reservations, they were sure it was a carb problem. The engine shop said that the -32 carb's known to have problems with this engine and that there is another carb that is approved, the 5217. It turns out that the -32 carb has an economizer jet, that leans out the mixture even more in the mid-range (this is what caused the roughness). The 5217 carb has an atomizer jet, which creates a better fuel distribution. Anyways, they installed the new carb and the temperatures are cooler and more even and most importantly, the roughness is gone.

BTW, yes, they went through the mags.
