Ingredients:
About a pound and a half of steak. Whatever cut you like is fine.
Olive oil
Salt, pepper, basil, oregano, rosemary, parsley, and a bay leaf. (Optional: garlic, sliced onions, bell peppers.)
Grated cheese (Parmesan, Romano, Asiago... whatever you prefer)
Red wine
1 large can crushed tomatoes.
Pasta
Shredded mozzarella cheese
Procedure:
Slice the steak into slices about 5/16" thick and up to three inches long.
Pour enough olive oil into a big pot to coat the bottom. Bring to medium heat.
Toss the steak into the pot, sprinkle it with the grated cheese and spices, and lightly brown it on all sides.
Add enough red wine to cover the meat and bring it just barely to a boil.
Add the tomatoes, a little water, and the bay leaf, stir, and bring back to a boil.
After boiling for about a minute, reduce heat, cover with the lid cocked, and simmer and reduce for about 45 minutes, stirring frequently.
Cook the pasta while the sauce is simmering.
Fish out the bay leaf, spoon the beef and sauce mix over the pasta, and top with the mozzarella cheese.
