So if you could make the entire pig one type of meat, what would it be?

Sorry for the thread drift so early on but a fantastically simple pulled pork recipe.

Just cover the pork in IBC rootbeer and cook in a crockpot on high 4-5 hours or low 8-9.

It falls apart and is absolutely fantastic.

Quite alright, I did pulled pork Saturday. It was so good I had to do a "Polled Pork" today. Polled pork? Get it? See what I did there?

I saw what you did there even before the gratuitous request for applause... :D

It will be interesting to see how the poll breakdown comes out. I've largely lost my taste for ham. I love bacon but it's a side, not an end in itself. Love ribs and I've been experimenting with them in the Weber. Saturday's pulled pork was a new venture for me. I'll take that stuff over a ham any day of the week.

Damn thing was so big I had to draw liquid out of the crock to avoid overflow. Turned out great though. Nine hours on high.

Why mess with perfection when one delectable animal gives us all of those things?

The butt makes the best pulled pork. Some people confuse the butt with the shoulder though. There is a difference.

I misread the title when I voted. I thought it said PULLED pork, and you were wondering what cut to use. That explains my 'shoulder' vote.

IIRC, the butt is a subset of the full shoulder (meaning the cut in the grocery store often sold as "shoulder", top part removed).

According to KCBS:

>>>
PORK: Pork is defined as Boston Butt, Boston Roast, Picnic and/or Whole Shoulder, weighing a minimum of four (4) pounds at the time of inspection. After trimming, pork shall be cooked whole (bone in or bone out), however, once cooked, it may be separated and returned to the cooker at the cook’s discretion. It may be turned in chopped, pulled, chunked, sliced or a combination of any of those.
<<<

Any cut, or name, that fits that category is OK for contests.

edit:

The rules about "separated" are a fairly recent change, I think.

The pork shoulder has about 3 distinct muscle groups in it. Some teams were separating them and cooking them separately in order to get a different result for pulling or slicing. The rules now specify it can't be separated until after cooking. What's common now at contests is to open the butt, almost like butterflying it, along those muscle lines, but not completely separating it. Then season it and roll it back up and put it on the smoker. When it's done, it's very simply to separate the muscle groups without tearing it apart.

If you're making just a little bit, use a Boston butt.

For real pulled pork, cook the whole pig and pick the meat apart, pulling it off the bones as you go. The cooking should involve wood, fire, smoke and much time.

Grilled beef is good, it's called "steak." Real barbecue is slow cooked, smoked pork. With sauce.

Here we go again. The dispute.

So what is slow cooked, smoked beef? (e.g. brisket?)

DINNER!

It's all good, give me a little pork, some beef, and hey, throw some chicken and a hunk of sausage on there too...

Well I'm liking the way the results are shaping up. Bacon is in the lead, followed by ribs, and then shoulder is closing in.

That's called "barbecued beef," and is hard to find around here. "Barbecue," like this thread (Poll: Pulled Pork) is made from pigs.

Two wrongs for the price of one.

Wrongs:
1) thread title
2) BBQ snobbery

Can't we all just get along?

I agree. We all like good food (BBQ, bacon, coleslaw, whatever).
We should be able to get along just fine.
Better sacrifice 2lbs of tender smoked brisket and a few links of sausage to make it happen. Oh, and I know where to take your sacrifice. So just get it to me and I will make sure that the gods are happy. Oh .. and I pref.... I mean the gods prefer juicy brisket. ;)
