If ones medical expires, is there anything more one must do, aside from just getting a new medical?
 
Nope. You just can't do anything that requires a medical until you get a new one.
I let my medical expire for almost ten years once.
 
Just remember that even if you quit flying, you're still subject to 14 CFR 61.15 as long as you hold an FAA pilot certificate. Of course, if you don't drink and drive, that shouldn't be an issue.
 
Remember also that you will still need to list all medical procedures/issues that you have had in the intervening years if/when you go for your next medical.
 
No, you only have to list visits to medical professionals for the preceding three years, unless you've had one of the issues listed in item 18.
