Lately when pumping fuel into Lyc IO360's fuel system before cranking to start up, the electric boost pump sounds sick.

It takes a few seconds to smooth out and sound normal. The fuel pressure comes right up during the initial short period of sounding sick.

Is this slow spool-up anything to worry about? Or is it time to replace it with another one, or to consider some inspection and maintenance on this one?

Next time you hear it get worse or slower, swap it before it fails on a hot day or during takeoff roll.
I wouldn't wait that long. It may slowly get worse, or it may just quit dead just as you need it. When the engine quits because its engine-driven pump failed, and the boost pump doesn't respond, you suddenly realize that you've probably sold your life for a few bucks.
