How much to lean the mixture?

When there is conflict like that, I'll stick with the more conservative approach, in this case, waiting until above 5000 DA.

Why do you consider that more conservative? What are you conserving?
 
Engine temps. Lean too much at full throttle and you can cook it.

What are you trading for that though? While you reduce short term issues, you magnify long term ones and add some short term maintenance costs not to mention adding a fair percentage of cost to every flight in wasted fuel. There really is only one solution to the issue and that is FADEC.
 
If you are Cooking the engine, you are not lean enough.
If you get so lean that CHT's are going down again to a significant degree, then you are way lean of best power with a carbureted engine. See the power curves in Lycoming's Key Reprints for details.
