I'm from North Jersey, I've read that Blairstown Airport seems to be a great place to get a glider rating.

Second Blairstown. Some fellow members from LongIslandSoaring.com traveled there to find the nearest DPE for their private exam. From Princeton you might also look into Philadelphia Glider Council (PGCsoaring.org).
