I just had some work done on my roll servo and was doing some testing. Before I had it taken out, when Im on the ground and roll it all the way left it keeps trying to go further and makes a loud clicking sound. But it doesn’t do it at full stop to the right, it just stops. Not sure about in the air… is this normal?

I believe if you will get out the manual the answer is provided. During ground test, the control wheel/yoke should turn smoothly in the corresponding direction. It will generally move just enough to establish the turn rate or follow the heading error. It does not force the controls into the far, hard stops

On the ground, it won't get a reaction from the rate sensor in the turn coordinator, thus will keep commanding more roll rate (turning the yoke further and further), slipping the clutch when the rigging hits the stops.

In the air, the airplane would roll, causing a reaction from the rate sensor, and the servo would eventually stop commanding roll rate long before it ever hit the stops, based on the rate sensor reaction.

Sounds like the servo clutch is slipping in one direction, but not the other.
