It is my understanding that the major phone carriers store SMS messages for some long period of time (5 years I think?)

Well I don't like that. I'm curious to know if Apple (or anyone else) stores iMessages. I suspect not, if you aren't using the cloud for backup.

Anyone know one way or the other?

Snapchat or WhatsApp (for now, until Facebook fixes that issue) could be the way to go for more privacy.

Snaps are not deleted, they're just stored in a format that the average joe can't access. I'm an avid snapchatter, but won't snap anything I wouldn't text.

Google voice. Of all the carriers / companies Google has the strongest record of user privacy protection.

Yeah, I know they use your data to serve ads...but they don't sell your data to third parties or give it to the government without a fight. NSA does steal it...but that's upstream from Google and they steal everyone else's too.

That's their public message. No one really knows. This is true of all companies. Unless you got them to sign a contract, it's all Marketing BS. Try getting any company under CALEA to sign a privacy document.

From Apple's terms of service agreement (you know, that thing that you never read and just click OK to):
To facilitate delivery of your iMessages and to enable you to maintain conversations across your devices, Apple may hold your iMessages in encrypted form for a limited period of time.
