Anyone else use cooking as a creative outlet?

I'll start.

Seared apples
Arugula
Caramelized red onions
Balsamic vinegar + buckwheat honey + olive oil + mustard powder
Cubed gouda
Crushed walnuts

No added salt, for the BP watchers.

I use eating as a creative outlet. Please feel free to cook for me.

Love cooking. My wife has frequent business trips to Paris and I have taken advantage of the three and four day "tourist" seminars at Le Cordon Bleu. I have learned basic sauces, bread, desserts and took one in Provencal techniques. Jaques Pepin is my hero de cuisine

I cook primarily for parties (my wife says I'm not so good on Tuesday night dinner, of course she never complains when I do).

Normal mass party fair:

Deep fried turnkey.
Smoked pork
Smoked Brisket
Smoked turkey
Whole roasted pig
Cioppino

I also cook for the staff at the Udvar-Hazy education the night before family days.
It's always over the top. Last time it was individual meat loafs. Working on the pre-Air-and-Scare dinner now.

The ability to cook is essential for a vegetarian. I like to think I'm pretty good, as is Mrs. Steingar. A few samplings:

Mrs. S makes her own greek-stype yogurt weekly. Used Brie as a starter one time, yummy
I ferment pickles in the basement. More than few POAers can testify to the results
I make sourdough breads, again weekly
I make whole-grain pastas
Mrs S. makes Seitan, a vegetarian protein source made from wheat gluten
No one can beat our beans No one.

Good for starters.

I've been doing variations on the theme of rice cooker biryani for the past few weeks. Indian, Lebanese, Moroccan, it's all good.

Saffron Chicken with yellow rice and black beans.
Picadillo
Beef Bourguignon with egg noodles
Ropa Vieja
Seared scallops in white wine garlic butter sauce
Pasta with Three meat rosa sauce with peas
Lemon chicken over garlic cheese couscous
Low cal garlic mashed potatoes
Oven roasted broccoli with garlic and balsamic vinegar syrup

Currently munching on persimmon cookies

since I grow about 500 lbs of squash a year, I make a lot of stuff with squash
(acorn, pumpkin etc)

made a gallon of squash-apple soup yesterday
always have stuffed acorn squash in the fridge, just heat it up and eat
squash tortellini
curry squash soup with rigatoni

navy bean-chicken-chipotle is up for next week
beef/black bean and beer chili
spinach salad with warm bacon/cranberry dressing

I smoke, grill, flambe',boil, Braise,Poach or otherwise cook all the animal flesh the Steingars save for us Heathens...

I kill none of it...it all starved to death because some Veggie Folks ate all their food...:wink2:!

4 hour Smoked Pork ribs
6 hour Smoked beef ribs
12 hour Smoked Beef Brisket
Smoked Bricks: Biscuits cooked on the smoker; a bit of butter and HEAVEN!
Lemon and Smoked Trout & Shrimp & Chicken & Quail & Roadkil...nevermind...

Add to that a bit of Grilled Corn-on-the-cob coated in Honey or grilled peas-in-the-pod grilled with brown suger
Hickory baked beans (these must of course be cooked in a pan other wise they would fall thru the grill...:yikes:).

Just a Southern Guy.

Chris

Homemade buttermilk biscuits
Chicken soup, stew, marinara sauce, whipped cream, hot chocolate, ice cream, all from scratch. There's always a gallon of soup and a quart or two of marinara sauce in the freezer.

I am like Sac Arrow, I like to eat and it shows. Trying to reverse that a bit this year losing 8# in the last two weeks.
