According 14 CFR Part 43 Appendix A a pilot may replace and service batteries. Would that include changing a battery in an Electric Attitude Indicator with a backup battery ?

Any thoughts ?

How would any authority know they had been changed?

They wouldn't unless there was an accident and they looked.

I looked in the pilot's manual for the AI and it states the battery is designed to be pilot servicable, so I think it's o.k.

Looked at what?

saw a battery with a service date, mfg date or use by date a decade or two after the original unit was installed . . .

though, if they are looking that closely at your airframe you would appear to have a lot more issues to worry about than an avionics battery . . .

I think the issue would be this phrase:

Preventive maintenance means simple or minor preservation operations and the replacement of small standard parts not involving complex assembly operations.

IOW, it depends on what you have to do to get in there, so I don't think there's any "one size fits all" answer.
