Anyone know if there is even an option to get Mexican approach plates on ForeFlight? All I am seeing is IFR enroute and WAC charts.

That's correct. Nothing else available from Foreflight. Please write them and request it. That's how things get prioritized.
I mostly use Air Nav Pro in Mexico, but only for VFR. My plane isn't really capable of flying IFR in the mountains and I don't think approach plates are available anyway. My buddy, another air nav pro user, recently bought the jep charts which further supports the notion that air nav pro doesn't have them.

So far as I know, only Jeppesen charts all instrument procedures in Mexico. LIDO charts only airline airports and then only CAT C and D minimums. Sometime the country's AIP has charts available to the public. Most of the time, however, the AIP is closed except by subscription.
