I've noticed a similar thing. Generally when I take non-pilot friends flying I let them have my nicer headset (a Lightspeed 20xlc) and I take the junky no-name. When I was a student pilot, I once did 6 hours in a day with that junky headset and didn't think much of it (although my ears did hurt). Now when I go back, I definitely notice the difference and would not want to do that any more than I have to.
I really ought to buy another set or two of the 20xlcs...
