So I requested my info withheld from the public. It works great, FAA no long shows my address. Now I can't see my 337s on FAA CARES, which I can deal with.

I recently requested change of address by sending them a mail. How do I know if they got the request and changed it since everything is withheld now?

Very recently had the same question. Especially as the aircraft registration was taking significantly longer to process than my airman certs.
I was just about to mail a new form when the updated registration appeared.

Aircraft registration takes way too effing long. I want to say i was 12 weeks for a standard registration in 2021

Believe it or not that has changed. For the better! Saw one take a year in those days. Seen them take less than two weeks pretty recently.

Send your request certified mail, return receipt. That way you have USPS proof that you mailed the FAA something; and that the FAA recieved it. If FAA disputes what was sent, it is incumbent upon them to produce the item matching the certified serial number to substantiate their claim. Otherwise, your version of events prevails. (I've been known to keep certified mail slips when drafting certain documents so the certified number can be incorporated into the face of the cover letter itself -- particularly my copy of it.)

Whether and how quickly they do their job with what you mailed them is out of your control. You've done as much as you can do and all that you are required to do.

Still waiting on one from late February though the online info finally updated last week so hopefully soonish for the physical copy.

If you opted out in the past, how can you opt back in?
