Outside of a total engine tear down/rebuild and a prop replacement what are some of the other problems that can manifest themselves that could possibly go undetected at first?

Would there be damage to the firewall, engine mounts, etc....

Depends on what the prop strikes and the velocity of the impact.

After a prop strike any discrepancy could be blamed on the hit.

Many prop strikes occur during accidents. Example- taildraggers tipping up on their nose. So, yes damage can happen.

Some thing is going to absorb the shock.
