Is it possible to add a co-owner to an aircraft registration without writing up another bill of sale? If not, how does one go about not re-engaging the sales tax monster?

To the first question, I don't think so, and to the second question, you'd need to ask an attorney familiar with the sales tax laws in your home state.

Not a lawyer or an accountant, but I think the way to do it (assuming you can't just re-register with both names) is to give the airplane to a new corporation, and then sell half the stock in said corporation to your new partner.
