Just something I dreamed up while shopping because all of the ingredients happened to be on sale...

INGREDIENTS:

6 whole-wheat wraps
1/4 pound prosciutto, sliced into little pieces
16 ounces ricotta cheese
8 ounces mozzarella cheese, sliced or shredded
6 sprinkles of grated Parmesan / Romano cheese
Little bit of olive oil

DIRECTIONS:

Prepare the ingredients (slice the prosciutto and slice / shred the mozzarella).

Lay out the wraps and put some mozzarella down the center of each one. Then put some prosciutto. Then spoon the ricotta over that, and sprinkle the grated cheese on top. (I don't think the order in which you do this makes a bit of difference, actually. This is just the way I happened to do it.)

Fold the wraps into a tube, sort of, using a bit of the ricotta as glue to hold it together. (I guess you could use egg, if you want; but the ricotta works fine.)

Put a little oil on a griddle and cook the wraps for just a minute or two on medium-low heat, then flip them over and cook then for about half that time.

When the cheese starts running out the ends and making a mess, they're done.

Enjoy!

EDIT: About 6 grams net carbs each.
