Has anyone come up with a good mounting scheme to capture the panel in a 172? I'd like to debrief my screw ups with video post flight but can't seem to find a good way to mount the camera.

I put my GoPro on the ceiling near the speaker/dome light. Clean the plastic really well - the adhesive GoPro mount will stick fine if it's 65F or warmer. I rent, so got the okay from the flight school and left the mount installed. Worked fine.

Do test video or use the LCD BacPac to adjust the camera position fore/aft for more/less panel vs outside vs pilots before you attach the mount.

For audio, I had best success with a lavalier microphone inside my headset cup and plugged into the GoPro. Also used an external Digital Voice Recorder and did my own synch by saying "clap clap clap" as I clapped my hands in front of the camera. You usually can't see people's faces so audio alignment isn't critical. If you have a critical audio event, use that as your synch marker.

Here's a video from a Cessna 152 - the arrangement is the same.

If you have a multiple camera system, and you want a camera to just capture a high resolution of the panel. Mount the camera on your chest. That will give you a full screen of the panel.
If you need it to capture the panel AND the outside view, then top center between the seatbelts. (Make sure your lens is in front of the straps) or use the head mount. That will give you a good shot of panel & outside.
My videos have both locations: https://www.youtube.com/channel/UCOtl0M98lQNMha8hW-1nlKA/videos
