Looking at an experimental tricycle gear airplane. A 7.00–6 is a little too tall and a little too fat, and a 6.00–6 seems a little bit short for the application. Is there a tire, even if metric that is a 6 inch wheel that has between these two in height?

no, 6.00 x 6 is a 17 inch diameter, a 7.00 x 6 has a 18 inch diameter, and a 15 x 6 has a 15 inch diameter.
