1st flights with a passenger at the controls it is a good idea to have them hang onto the shoulder straps during the take off. That way they usually won't go for controls when they get scared as they are already hanging onto the straps. Usually the will just tighten their grip.

In the school that I trained at, the instructors let the student "pilot" take off most times. But the instructor would be ready to grab the yoke if something went wrong. Maybe this instructor got lazy.
