My advice - assume you forget everything and think of yourself as a new student for the first few lessons - it will help the ego deal with less then perfect performance and avoid the "I should know this".
It will all come back.

One of the things I like the most when working with a different CFI is the different opinions about things.
Today, we did stalls.
As a student I was thought - pick the low wing with the rudder.
CFI: "Use aileron, otherwise you could enter a spin"
Me: "Adding that rudder is will cause...
Do you "read back" instructions?
I've found that repeating the instructions helps me to actually remember what had been said, and let the "other guy" (CFI/ATC/DPE) know I got it.
On my Instrument rating I just wrote down everything. That helps too.
Its a good skill to have, think traffic...
