Rum balls?

Does anyone else make rum balls for Christmas? Do you have a good recipe for rum balls? Why do you have to let them age for several days? :dunno:
 
My law partner's wife makes an awesome rum ball; I'll ask him if she'll part with the recipe.

The following has transpired on my job in Wisconsin:

The porta-potty has an advertisement inside (nothing is sacred anymore...ads are indeed everywhere). It's for a company that is apparently defunct because their website doesn't work anymore. The web address is (was) http://www.etballs.org and there's a football logo next to it.

So...construction guys (being construction guys) JUST HAD TO start modifying the web address. The following is the metamorphosis it went through:

I have a recipe for rum balls as well. My mother used to make them when I was 'younger' and I thought they were awesome! We let them age too but I'm not sure why. We also would make orange balls and I think that they had rum in them as well as the orange flavor. All I remember is that they were really, really good! I'm away from home right now, but if this thread is still going in a week, I'll be home and will post the recipe.

Okie dokes. :) But, it might be too late for them to age before Christmas. Although, mine turned out so good tonight, they may not make it till Christmas anyway. :D
 
Leslie's sister made some for us and had them waiting at home when we returned from T-Day in FL. Yum!:yes:

I make Double Chocolate/Cherry Bourbon Balls. Though I never tried, I don't see why you couldn't substitute your favorite liquor.

1 6oz package of Chocolate Chips
3 T Corn Syrup
1/2 c Bourbon or 1/4 c plus 1/4 ginger ale
1 8 1/2 oz package of chocolate wafers, crushed
1/2 c Confectioners suger
1 c finely chopped nuts
1/4 finely chopped candied cherries

granulated sugar
powered chocolate

Melt chips in a double boiler (or microwave on high in 25 sec increments - ask how I know). Remove from heat, add corn syrup and bourbon. In another bowl, mix wafer, nuts, confectioners sugar, and cherries. Add chocolate mix and blend well. Refrigerate 1 hour. Roll into 1 inch balls and roll in sugar or chocolate or both.

As I read the recipe, I can note that I use maraschino cherries and also add some cherry juice to the mix.

Here is a combination of two recipes that I used yesterday. I think next time I'll use less ginger or maybe leave it out.

* 1 6 oz package semi-sweet chocolate chips
* 3 tablespoons light Karo syrup
* 1/2 cup of sugar
* 2 cups vanilla wafers, crushed
* 1 cup pecans, chopped fine
* 1/3 cup rum (or bourbon or brandy)
* 1/2 teaspoon cinnamon
* 1/2 teaspoon ginger
* powdered sugar, for coating

Melt chocolate over low heat-remove-stir in sugar, rum and corn syrup. Fold in wafers, cinnamon, ginger and nuts. Shape into 1" balls using 2 tsp mix for each. Roll in powdered sugar. Store in air-tight container for several days. Makes 4 dozen balls.

I actually used a little extra rum for good measure, so it ended up being at least 1/2 cup. :D

I used to have a decent recipe but who knows where it is. I am definitely making these this year and probably from one of the above!

I have a great Pine Bark recipe, let's see if I can find it.

OK, this is not mine, it's Paula Deen's. I used Ritz crackers instead and vanilla instead of almond extract. I think I used Lindt chocolate, maybe even dark, can't remember.

Ingredients
35 saltine crackers
1 cup butter
1 cup packed light brown sugar
1/2 teaspoon almond extract
5 (4-ounce) milk chocolate bars, broken into pieces
Directions
Preheat oven to 400 degrees F.

Line a 15 by 10 by 1-inch jelly roll pan with tin foil. Lightly spray foil with a non-stick cooking spray.

Place saltine crackers, salty side up, in prepared pan. In a saucepan, boil butter and sugar for 2 to 3 minutes, stirring constantly. Remove from heat and stir in almond extract. Pour mixture over crackers and bake for 4 to 6 minutes. Remove from oven, top with candy bars, and spread evenly as chocolate begins to melt. Cool slightly and transfer onto waxed paper. Allow to cool completely.

I always throw it in the fridge. Apparently it freezes well too.

I have a great rum ball recipe where you leave out everything but the glass, ice, rum, and the lime wedge. It's a ball.

Ok....so you guys bring the BEST margarita's EVER to Gastons, L - makes rum cake while at Gastons, Sharon makes SoCo. Cake. Tony and his golden beer. Wow...PoA loves alcohol.

I have not had an alcoholic drink since July. :D I gave away all my Jager.

Hmmmm, so I wonder what would happen if I use the Bacardi 151 rum that I bought a few months ago for a flambé dish? Would the rum balls taste different/better or catch on fire if near a candle? :dunno:

I think they might be fire hazards at some point but after a few no one would be able to complain!
