If you anticipate riding several hundred miles in a day, multiple days in a row, I can vouch for a Russell Daylong seat. They are pricey, but worth every penny if you are spending a lot of time in the saddle. Yes, they are ugly, and not good for off-road/standing on the pegs, but they make long trips enjoyable and not torturous.

Probably going to get a good set of gear and just ride for a while before spending money on the bike kit.
