Just finished the same breakfast. Now onto Blackeyed Peas.

My roommate in grad school taught me about blackeyed peas on New Years Day. He was from Georgia. And he said it was for good luck, in the new year.

Since then, I've hankered for blackeye peas every New Year's Day. But living in the North, the opportunity does not always present itself. So I suffer through the year, bad luck and all.
 
Oh man, oh man... SOOOO good.

Bacon grease also makes the best fried rice! (Trust me on this) Heck, it even makes brussel sprouts taste good!

so, I only recently found out that you can BAKE bacon. please enlighten me on this bacon grease thingamajiggy y'all are talking about. what do I do?

Fry the bacon in a skillet. Remove and set in a paper towel to drain. Crack eggs into warm skillet still in stove,and cook as desired. Bacon grease in the pan minimizes eggs sticking to the skillet, and maximizes the taste!

If you bake the bacon, or fry it, remove the bacon and tip the container into an empty jar, small bowl, ramekin, etc., and drain as much if the bacon drippings as possible. Use it later as described in the first paragraph by letting it melt in the skillet while heating it to cook.

hhmm, ok. I already do the first thing u mentioned.......cook the bacon, take it out then fry an egg in the same pan. never done the second thing. so basically instead of butter or oil, ur taking some of that bacony goop and slapping it in the pan instead? sounds kinda good!

Old school popcorn cooked on the stove top in bacon freese. Top with a little salt and dash of black pepper.

While that is very good, spaghetti carbonara may actually be better. Panchetta (bacon), eggs, cheese, spaghetti.
 
You mean there are actually people who don't use bacon grease to cook most everything else??

And, if you splash the grease over the top of the egg you can make an over easy egg without flipping it...

Hey Grandpa, What's for Supper?

GRANDPA: Fried ‘taters with onions in the cast iron skillet, smoked sausage sliced and I over filled it, Cat-head biscuit made with buttermilk, with pure honey as good as honeysuckle silk, bacon baked beans and just turned out bread, sweet p'tater with butter and coffee dat's thicker than lead.
